Perhaps last summer and the fall went alright for them, but they really should have prepared for what winter would be like in the Colorado mountains.

They didn't have to make their last stand in the Colorado wilderness during the winter. They could have come in from the cold and resumed their off-grid lifestyle in the spring and then be better prepared for the next winter. At least they should have gone into Gunnison,_Colorado for some winter supplies, before it was too late.

However, perhaps even going to Gunnison might have been too much civilization for them.
"Gunnison residents isolated themselves from the surrounding area during the Spanish Influenza epidemic for two months at the end of 1918. All highways were barricaded near the county lines. Train conductors warned all passengers that if they stepped outside of the train in Gunnison, they would be arrested and quarantined for five days.[8][9] This served as partial inspiration for the novel The Last Town on Earth (2006) by Thomas Mullen. The isolation was ultimately unsuccessful, as townspeople became restless after a few months, and the isolation was lifted in February 1919 only to have the flu arrive a month later, killing several." https://en.wikipedia.org/wiki/Gunnison,_Colorado#History

"The plot centres on a pandemic resulting from a mishap at a military biological research station which allows the escape of a lethal strain of influenza. After the pandemic kills almost the entire world population, the few survivors are drawn to one of two figures, Randall Flagg and Mother Abagail, setting up a final good-vs-evil confrontation." https://en.wikipedia.org/wiki/The_Stand_(2020_miniseries)
Living in the wilderness can be a matter of life and death, just like living in the city.
